Grilled Veggie Stuffed Sweet Potatoes that's sure to be a crowd-pleaser

Ingredients:

  • 4 medium-sized sweet potatoes

  • 2 cups of mixed bell peppers (red, green, and yellow), diced

  • 1 cup of red onion, diced

  • 1 cup of zucchini, diced

  • 1 cup of cherry tomatoes, halved

  • 1 cup of corn kernels (fresh or frozen)

  • 2 tablespoons of olive oil

  • 2 cloves of garlic, minced

  • 1 teaspoon of smoked paprika

  • 1/2 teaspoon of cumin

  • Salt and pepper to taste

  • 1/2 cup of shredded reduced-fat cheddar cheese (optional)

  • Fresh cilantro or parsley for garnish

Instructions:

Preheat your grill to medium-high heat.

Wash the sweet potatoes thoroughly and pierce them several times with a fork. Microwave them for about 5 minutes to soften slightly.

In a large bowl, combine the diced bell peppers, red onion, zucchini, cherry tomatoes, and corn.

Drizzle the olive oil over the vegetables and toss to coat. Add the minced garlic, smoked paprika, cumin, salt, and pepper. Mix well to ensure the veggies are evenly seasoned.

Cut the partially cooked sweet potatoes in half lengthwise. Brush the cut sides with a little olive oil to prevent sticking to the grill.

Grill the sweet potatoes, cut side down, for about 5 minutes until they have grill marks and are slightly charred.

While the sweet potatoes are grilling, place the seasoned vegetables in a grill basket or on a piece of aluminum foil on the grill. Grill the vegetables for about 10-15 minutes, stirring occasionally, until they are tender and slightly charred.

Once the sweet potatoes and veggies are ready, remove them from the grill.

To assemble, place each sweet potato half on a plate. Fill the cavity with the grilled vegetable mixture. If desired, sprinkle some shredded cheddar cheese on top of each stuffed sweet potato.

Garnish with fresh cilantro or parsley for a burst of color and flavor.
