re you ready to have a great Thanksgiving?! Remember this week isn't for guilt. Thanksgiving is a day to really sit down and enjoy time with family and a good meal. Key to a long life is your relationships, so don't be bothered by calories on Thursday. Laugh and love with your family.
I know for me, I'm always looking for some leftover recipes that are delicious! So remember to save to recipe for the end of them week! You won't be disappointed.
This is a great way to enjoy holiday leftovers … and have a nutritious meal.
TIP: If you have some leftover fresh sage, chop up 1-2 leaves and sprinkle over the tortillas before you fold them over (yum!).
Turkey & Cranberry Quesadillas (serves 1)
2 whole grain tortillas
2 Tbsp cranberry sauce
½ cup (3-4 oz/85-115 g) shredded or chopped cooked turkey
2 Tbsp goat cheese crumbles
(optional) 1-2 dashes of hot sauce
Preheat your oven to 425ºF/220ºC or turn on your toaster oven.
Lay tortillas on a sheet pan that has been sprayed with nonstick spray, or on a foil-lined toaster oven pan.
Spread the cranberry sauce over half of each tortilla, and then top with turkey and goat cheese. Fold over the tortilla to form a half-circle.
In the oven: Bake for about 5 minutes on each side, then flip and bake for 5 to 7 minutes more until golden brown.
In the toaster oven: Place in the toaster oven and toast until the cheese melts, about 10-12 minutes.
Remove from the oven and serve with a dash of hot sauce if desired.
