How do you feel about plant-based foods?
This plant-based soup is so good. You won't be missing the meat. If you want to feel younger and live longer, science is now showing to limit meat and eat more plant-based food. It's important to get all your anti-oxidants.
This soup is also full of spices that help with inflammation of the body. Inflammatory diseases start to come about more when we age, but there are ways to prevent them. And one way is with the foods we choose.
My husband who says he can't have anything without meat in it was raving about this soup! So, I swear it's delicious. Give it a try! It's perfect for the cold winter months!

Lentil Soup Recipe
2 Tbsp. olive oil
1 medium yellow onion, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
3 garlic clove, minced
2 tsp. cumin
1 tsp. turmeric
1 tsp. dried thyme
2 bay leaves
1/2 tsp. salt
1/4 tsp. black pepper
1 small sweet potato, diced in 1/2" cubes
1 cup of brown lentils, rinsed
4 cups of vegetable broth
8 oz. spinach
Directions
Heat olive oil on medium in the pan and add carrots, onion and celery. Cook for 5 minutes.
Add the garlic and spices and cook another 30 seconds to a minute, until fragrant. Stir constantly.
Pour in the sweet potato, lentils and vegetable broth. Raise heat to bring to a boil, then cover and bring the heat down to a low simmer. Cook for 25-30 minutes.
Add spinach at the end and stir until wilted.
Serve with a dollop of plain greek yogurt (if not a vegan) and squirt in a lemon slice.
(P.S. I make this in the instapot.. If you liked to do in the instapot, just saute the celery, onions, and carrots in the instapot for 5 minutes at first, then throw in the garlic and spices, do another minute. Then throw in the rest of ingredients except spinach. Pressure cook for 12 minutes and natural release for 10 min. Either add fresh spinach at the end or frozen spinach before you pressure cook. Both are good.)
