  • 1 tablespoon olive oil

  • 4 cups vegetable broth

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Toss butternut squash, onion, and garlic with olive oil, salt, and pepper.

  3. Roast for 30-40 minutes, or until tender.

  4. Place roasted vegetables in a blender with vegetable broth and puree until smooth.

  5. Season with additional salt and pepper to taste.
