Recipe of the week: Thai Chicken Stir-Fry
Ingredients:
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breast, thinly sliced
3 cloves garlic, minced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup sugar snap peas, trimmed
1 medium carrot, julienned
1 small onion, thinly sliced
2 tablespoons of soy sauce
2 tablespoons oyster sauce
1 tablespoon fish sauce
1 tablespoon of hoisin sauce
1 tablespoon fresh lime juice
1 teaspoon brown sugar (optional)
1 cup fresh Thai basil leaves
Salt and pepper to taste
Instructions:
Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken slices and stir-fry until they are cooked through and lightly browned. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the sliced bell peppers, sugar snap peas, carrot, and onion. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
In a small bowl, whisk together the soy sauce, oyster sauce, fish sauce, hoisin sauce, lime juice, and brown sugar (if using). Pour the sauce mixture into the skillet with the vegetables and stir to coat evenly.
Return the cooked chicken to the skillet and toss everything together. Add salt and pepper to taste. Cook for an additional 2-3 minutes until the chicken is heated through.
Remove the skillet from the heat and stir in the fresh Thai basil leaves. The residual heat will wilt the basil slightly, releasing its aromatic flavors.
Serve the Thai basil chicken stir-fry over rice.
